The De Moors farm this Chablis organically, in Kimmeridgian soil (ancient seabed). It's dry, and all-yellow-plum, all-the-time. A touch of minerally almond skin on the finish. Native yeast, and a touch of light filtration this vintage. As always, no added sulfur.
