ALIGOTE: BURGUNDY'S 'OTHER WHITE GRAPE' - BUT MAKE IT CALIFORNIA

So very little Aligoté is planted in California, which makes this bottle both a novelty and a rare treat. Just a little over 100 cases made.  

+ GRAPE: 100% Aligoté. Grown on Barbed Oak Vineyard in Sonoma County, CA

+ PROFILE: Allll the citrus. Dry, textural, crisp. Lemon blossom, lemon curd, yellow apple, citrus pith. Bright acidity on the tail. 

+ FUNDAMENTALS: Wild yeast. Fermented in concrete amphora using wild yeast. Aged for 17 months on the lees, then moved to neutral barrel to undergo full malolactic fermentation for 11 months [which lends a lovely texture to the wine]. Unfiltered, and bottled with very low sulfur.
