GRAPE: 100% Chasselas.
FUNDAMENTALS: Practicing organic. Dry. Medium body and acidity.
FLAVOR PROFILE: Meyer lemon, crisp yellow apple, flint, minerally, saline. Beautiful finish, with a touch less of an acid bite. Great alternative if you're a fan of Loire Sauvignon Blanc (I'm lookin' at you, Sancerre)!
PAIRINGS: Semi-soft Alpine cheeses, paté and grainy mustard all day long.
FUN FACTS: Kimmeridgian soil (ancient seabed) gives this a beautiful salinity to complement bright orchard fruit and citrus notes. Chasselas is traditionally grown in Switzerland. Mmmm...fondue.
