GRAPE: 100% Sangiovese
FUNDAMENTALS: Biodynamic farming. Hand-harvested grapes. Partially destemmmed, some whole cluster. Native yeast for fermentation. Entirely vilified in concrete to keep things fresh.
PROFILE: Dry. Medium body. Floral nose, cherry, red berries, orange blossom, spice and dusty tannins.
PAIRINGS: Equally at home with steak or red-sauce dishes and pizza.
FUN FACT: The grapes come from two parcels in Chianti Classico (and Antonio Galloni named this a 92-point wine, if that's your thing!)
