FUNDAMENTALS: Organic, biodynamic practices. All stainless vinification, native yeast, low sulfur
PROFILE: Fresh, medium body, dry, juicy-earthy quality, bramble berries, a touch of mushroomy earthiness, soft tannins. Serve with a light chill.
PAIRINGS: This will ace anything from the grill, but it's awfully nice on its own, too
FUN FACT: Rapillo offers village wines that were previously were only sold in growlers to the locals. The word 'Rapillo' means serrated in Italian. This is craggy, nearly inhospitable volcanic terrain, nowhere near an Autogrille (if you know, you know...)
