FUNDAMENTALS: Organic. Lo-fi winemaking: native yeast, partial whole-cluster fermentation, unfined, unfiltered
PROFILE: Dry. Light-medium body. Juicy. Blackberry tea, black currant, wild fennel, plum, violets, bay leaves, balsam. Present tannins, but not overt.
PAIRINGS: All-BBQ, all-the-time. Pork schnitzel. A delightful chillable red that great on its own.
