+ GRAPE: 100% organic Chardonnay. Grown at a high elevations across the board, which lends those 'alpine vibes'. Mountain-top vineyard sites include: Mendocino Ridge, Santa Cruz Mountains, and the Sonoma Coast AVAs.
+ PROFILE: Salt air, honeycomb, lemon zest, quince, flinty stone.
+ FUNDAMENTALS: Fermented with wild yeast, then aged for nine months in older French oak, and an additional nine months in stainless steel tanks to freshen things up. Minimal sulfites used [~25ppm free s02].
