+ GRAPE: 100% Pedro Ximenez. Grown in the deep, hot region of Andalusia in southern Spain on limestone soils.
+ PROFILE: Drinks like a well-crafted sherry Fino, but lower octane (ABV). Fresh, crisp, dry, medium-plus body - with savory tones. Fennel blossom, fresh almonds, gleen olives, fresh herbs. Enjoy with tinned fish, olives, cheeses, jamon and other delicious tapas.
+ FUNDAMENTALS: Partially vinified in clay amphora. Spends Eight months under flor. From one of Spain's oldest wineries, which dates back to the 16th century (!).
