+ GRAPES: Organic. Mostly old-vine Nerello Mascalese, some Nero d'Avola. Grown in Randazzo, an hour north of Catania, in deep volcanic soil.
+ PROFILE: Bone dry, medium body, beautifully textural. Blood orange, ruby grapefruit, pomegranate, almond shell. Crisp acidity on the tail. Sicily in a glass!
+ FUNDAMENTALS: Pet-Nat style. Hand-harvested, all-stainless steel winemaking, with eight months on the lees for texture. Zero chemicals or preservatives in the wine. Ayunta is a family-owned estate. A mere 375 cases made annually.
