+ GRAPES:  70% Palomino + 30% Chardonnay, grown in the deep south of Spain - on the chalky soils of Cadiz in Andalucia. 

+ PROFILE:  Fresh, fruit upfront, savory finish. Lightly briny seashell, pomelo, Asian pear, fresh almonds, nori. 

+ FUNDAMENTALS:  Made in the method traditional, like Champagne. Aged on the lees for two years. Lively bubbles. 

+ PAIRINGS: This would be amazing with fried food of any sort: anchovies, olives, tempura, etc. - or just a lovely plate of tapas.
