+ PROFILE: Elegant, serious, dry. Yellow fruit - apple, lemon rind - plus fennel, fresh almond, citrus leaf, and saline minerals. Textural body that finishes with racy acidity. An excellent food wine.
+ FUNDAMENTALS: Wild yeast for fermentation, entirely in cement for freshness. Extended fine-lees aging lends texture and tension.
