+ PROFILE: Dry, elegant, medium body, silky/dusty tannins. Characteristic dried rose and wet tar on the nose, followed by dried cherry, tobacco leaf, damp earth, and a fabulous mineral streak. Long finish, fine acidity.
+ FUNDAMENTALS: All wild yeast kickstarts fermentation in stainless steel tanks. The wine undergoes full malolactic fermentation, then finishes in large, used oak barrels to soften the tannins.
