A sessionable Sierra blend that's pretty much everything you could want in a chillable red. This is a special project for Selection Massale by Shaunt Oungoulian of Les Lunes Wines - another shop favorite.
+ GRAPES: Practicing organic. 40% Cinsault + 40% Grenache + 20% Counoise from multiple parcels around the Sierra Foothills region.
+ FUNDAMENTALS: Wild yeast. Stainless tank fermentation. The Grenache and Cinsault are semi-carbonic: one week carbonic, and then removed from the tank to destem the grapes. The Counoise is fully destemmed, then pressed to dryness.
+ WINEMAKERS: They lease their own vineyards, work their own vines and built their own cellar. Shaunt believes in proper pruning, well-timed treatments and thoughtful weed management. Preservation of the indigenous microbes on the grapes and in the soils is very important; it leads to healthier and more complex wines that don’t need adjusting or stabilizing in the cellar.
