California Stars is a side project from Shaunt and Diego of the incredible Les Lunes Wines. This bottle challenges preconceived notions of a classic California red blend with remarkable freshness.
+ GRAPES: Blend of 60% Cabernet Sauvignon + 40% Merlot. Organic growing in Sonoma and Napa, respectively.
+ PROFILE: Dry-juicy, and medium body. Forest berries, plum, graphite, river stones all wrapped up with medium grip on the tail. An excellent APR [all-purpose-red] best with a slight chill.
+ FUNDAMENTALS: Destemmed grapes. Vinified in stainless tanks, finished in a combo of neutral French oak and flexitanks for freshness. Blended just prior to bottling, with the modest addition of just 20ppm sulfites. 12% ABV.
