+ GRAPES: Organic. 90% Mencia, 5% Garnacha + 5% Palomino grown in Bierzo, Spain. Red-white grape co-ferment from vines that average 50 years old. Primarily clay soils. Vegan.
+ PROFILE: Dry, full body, fresh! Heaps of finesse - violets on the nose, plush blue plum, bluestone minerals, savory earthy herbs, peppery finish. I have a bit of grip, so I make an exceptional food wine.
+ FUNDAMENTALS: Destemmed and fermented using wild yeast in amphora and large, open-top French oak barrels. Full malolactic fermentation. Aged for nine months in French oak, stainless steel, and concrete egg. That's a lot of interesting winemaking in one place!
