+ GRAPES: Organic. 85% Mencia, with the balance being Garnacha + Palomino grown in Bierzo, Spain. Red-white grape co-ferment from vines that average 75 years old. Primarily clay soils. Vegan.
+ PROFILE: Dry, full body, fresh! Heaps of finesse - violets on the nose, blackberry, plush blue plum, bluestone minerals, savory earthy herbs, peppery finish. I have a bit of grip, so I make an exceptional food wine. A tiny chill is also super nice.
+ FUNDAMENTALS: Destemmed and fermented using wild yeast in fiberglass tank. Full malolactic fermentation. Aged for nine months in French oak, stainless steel, and concrete egg. Unfined, unfiltered, minimal sulfur use - just at bottling. That's a lot of interesting winemaking in one place!
