+ PROFILE: Dry, full-body. White flowers on the nose, followed by lime leaf, Castelvetrano olive brine, almond-skin, lemon olive oil, and white pepper. Minerally, lively finish.
+ FUNDAMENTALS: Wholecluster pressed, wild-yeast, and all stainless steel tank aging. Spends a touch of time on the lees. Bentonite fined, unfiltered. A mere 500 cases made.
