+ GRAPE: 100% old-vine Gaglioppo. Organic. Grown in the deep southern 'toe' of Italy's boot, in the Ciro region of Calabria. Uncommon and delightful.
+ PROFILE: Dry, medium body, bright acidity. Floral-raspberry on the nose, followed by plump raspberries on the palate, together with bramble, blackberry tisane and delicate spice. This is a food wine, that really shines with rich or spicy dishes. Rustic in a good way. H.T. 20 minutes in the fridge for the win.
+ FUNDAMENTALS: Lo-fi winemaking. Wild yeast only for fermentation in stainless steel tanks, followed by cement for aging. Unfined and unfiltered. Clean and classic Italian!
