+ GRAPES: Blend of 60% Merlot, 35% Cabernet Franc, 5% Cabernet Sauvignon. Old vines. Grown organically by the Pueyo family: fifth-generation winemakers on the right bank of Bordeaux, France.
+ PROFILE: Plush, velvety. The nose gives rich notes of tobacco and coffee, backed by red currant, cassis, and raspberry on the palate. Silky tannins on the finish, yet graceful enough to drink now.
+ FUNDAMENTALS: The grapes are destemmed. Vinified with wild yeast in a combination of vessels to maintain freshness and fruit: 50% in concrete, 50% in oak [25% new oak + 25% second-use barrels]. No fining or filtration. Minimal use of sulfites. Vegan.
