FUNDAMENTALS: Organic. Minimal intervention. Native yeast, slow fermentation that sees full malo. Lees aging for texture. Vinified in a combo of stainless steel and a touch of imperceptible neutral used oak.
PROFILE: Yellow plum, yellow apple, honeysuckle, dusty citrus. Balanced acidity.
