This light, delicate bistro Malbec takes on an entirely different dimension in France's terroir.
+ GRAPE: 100% Cot. Cot is the local name for Malbec in the maritime region of Touraine in northern France. Certified organic. Grown on limestone-clay soils.
+ PROFILE: Dry, light body, medium-plus acidity. Fresh! Fennel flower, tart cherry, almonds, crunchy blackcurrant. Structured tannins round things out. Serve with a light chill.
+ FUNDAMENTALS: The grapes are destemmed, and fermented using only wild yeast in wooden vats. Full malolactic fermentation lends a touch of viscosity. Just a tiny bit of sulfites, only at bottling to keep things fresh and stable.
