GRAPE: 100% Cartoxià Vermell (a.k.a. Xarel-lo Gris) a very rare grape from the Tarragona region in Catalan Spain. 65 year old vines. 

FUNDAMENTALS: Technically a red wine, that drinks like an orange rosé. Coppery pink. 3 weeks skin-contact in ceramic, aged in neutral barrels. Low sulfur. 

PROFILE: Dry. Light-medium body. Elegant, savory, orange peel, dried apricot, nectarine with a saline minerality on the tail. Olive brine. Drink off-chilled. 

PAIRINGS: Jamon Iberico, bold salty cheeses, fritto misto of any sort, marcona almonds
