Wow. We were blown away by the quality and complexity of this Finger Lakes pet-nat. The Riesling really shines through with bright acidity, balanced by a earthy tones, beautiful texture, cider tones, and quince. A mere 160 cases made. Absolutely worthy of exploration.
Via The Importer:
"Inspired by natural winemaking from regions like the Loire and Beaujolais, Fossil & Till focuses on a minimalist approach to winemaking in the Finger Lakes: native yeast fermentation, no additions of acids, sugars, or enzymes, little to no fining or filtration, and minimal additions of sulfur."
"This wine is a pétillant naturel- a traditional method used to make sparkling wines that predates the Champagne method."
