+ GRAPES: Organic. 100% Catarratto. Grown on Sicily's northern coast inland-west of Palermo. 

+ PROFILE: Dry. Textural, medium-plus body. Orange oil, volcanic lemon, white tea, almond husk. Lifted acidity brightens things up on lightly saline finish. 

+ FUNDAMENTALS: Two days skin-contact. All stainless steel. Wild yeast, light filtration. Best off-chilled, e.g. 20 mins in the fridge [or out of the fridge]. 1.6k cases made. Low sulfites. 

+ PAIRINGS: Savory nibbles - Marcona olives, Castelvetrano olives, olive oil crackers, saffron cheese.

'Cala Bianco is Dario Serrentino from Mortellito's spin on the white grapes from the northwest of Sicilia. He works with the specific clone of Catarratto that's called 'Catarratto Extra Lucido' - Extra Shiny Catarratto - which gives wines with more texture, depth, and color that the common Catarratto usually found throughout Sicilia.

Dario is known for making highly drinkable and sea-breeze salty island wines. Seeking to tweak the acidity even more, he picks early in August instead of September.'
