+ GRAPE: 100% Chenin Blanc. Organic growing on clay-limestone soils in the Loire Valley, France.
+ PROFILE: Dry, fresh, medium body, crisp acidity. Super versatile, with notes of crunchy pear, meyer lemon, beeswax, and stony minerality. A fantastic option if you've found yourself in a Sauvignon Blanc rut.
+ FUNDAMENTALS: 30-50 year old vines. Fermented with wild yeast entirely in stainless tanks, zero oak. The wine rests for six months on the lees, then filtered lightly. Just a teeny bit of sulfur added at bottling for stability.
