+ PROFILE: Dry, medium body. Bing cherry, ripe plum, autumnal spice, earthy-forest notes. Balanced, pleasant acidity and modest tannins.
+ FUNDAMENTALS: Hand-harvested, destemmed, then vinified in open-top fermenters - with a small addition of whole bunches for complexity. Left on its lees for five months before bottling with only minimal sulphur at bottling.
