Il Vulcano di Elisa is a dedication to women winemakers, a love letter to the terroir of Mount Etna.
+ GRAPE: 100% Nerello Mascalese. Organic. Grown on the slopes of the active Mount Etna volcano in Sicily.
+ PROFILE: Dry, with red flowers and Mediterranean scrub on the nose. Deep Morello cherry, ripe strawberry and black cherry compote follows, with a lovely obsidian stone minerality on the finish. Serve with a slight chill.
+ FUNDAMENTALS: Dry farmed, and hand-harvested grapes, 100% destemmed. A 15-day maceration is followed by 15 days of fermentation, including secondary malolactic fermentation. This lends a lovely mouthfeel. Aging in in large, used oak barrels. Elisa uses only wild yeast for fermentation. Vegan. And yes, a woman winemaker!
