+ GRAPES: Biodynamic. 80% Welchriesling, 10% Sauvignon Blanc, 10% Traminer blend.
+ PROFILE: Aromatic, lean, and textural. White flowers, orange oil, honeysuckle, grapefruit pith, green apple notes.
+ FUNDAMENTALS: Wild yeast. Each grape varietal is fermented separately in ceramic, amphora, and steel. Sees ~two weeks skin-contact. The wine rests another 10 months on fine lees in clay amphora prior to blending and bottling. Unfined, unfiltered. Sulfur: <10mg/L.
