+ FUNDAMENTALS: Hand harvested, wild yeast. 10 days of whole-cluster fermentation in a large stainless steel tank. Unfined, unfiltered, and a mere 10ppm sulfur at bottling.
+ THE WINEMAKER: The winemaker, Francois Xavier A.K.A 'FX', is a rising star in the Roussillon worked at legendary winery, Matassa, for years.
