Slightly wild, always wonderful.
+ GRAPES: Biodynamic. Mostly Clairette Blanche + some Cinsault grown in Languedoc-Roussillon in southern France. Technically an 'orange noire'.
+ PROFILE: Dry, salty, peachy, pineappley, yellow plum-y. I'm lightly natty with some V.A., hazy, and have some peach-pit grip. That saline finish? It's halcyon, and on, and on...
+ SERVING: Important! Give this a light chill, and let breathe. The reductive nose will blow off, and the secondary fruit will shine through.
+ FUNDAMENTALS: The Clairette Blanche spent eight days on the skin. It's then blended with direct-press Cinsault. All wholecluster. Unfined, unfiltered. Zero added sulfites.
