+ GRAPES: Sustainable 85% Salamino + 15% Ancellotta. Grown in the hills of Emilia-Romagna.
+ PROFILE: Dry-juicy. Bramble, red berries, mineral backbone. 12g residual sugar is balanced by 7g of acidity. Boasts a nice, long fresh finish.
+ FUNDAMENTALS: Two-week fermentation, partial malolactic and lees aging. Secondary fermentation takes place in tanks using the charmat method. Fined using Bentonite clay. Suitable for vegans.
