+ GRAPES: 100% organic Gamay. Grown on the steep slopes of Lorraine in the tiny appellation of Cotes du Toul, on the border between France and Germany. 

+ PROFILE: Pale rose-gold in the glass. Bone dry, fresh, and elegant. Crystaline raspberry, hints of red currant, white peach skin. pink Himalayan salt, and brioche. Super minerally with fine bubbles, refreshing acidity, and a delightfully long finish. 

Possibly not the most eye-catching label, but don't let that stop you - this bubbly overdelivers.
