Sits squarely between super-racy, mineral-and-oyster-shell Chablis on one end of the spectrum, and opulent richness on the other. A superbly balanced meld of fresh fruit with lacy acidity.
+ GRAPE: 100% Chardonnay. Sustainably grown.
+ PROFILE: Medium dry, full body. Green apple nose, golden apple, almond skin, pear, citrus peel on the palate. There's a generosity of fruit, tempered by a saline finish.
+ PAIRINGS: Roast chicken, roasted root vegetables, onion soup.
+ FUNDAMENTALS: Grapes grown on a plot on a plateau on the left bank of the Serein, across from Fourchaume, from vines planted in 1974. This is a fresh cuvée - the grapes never have direct contact with the sun, as the rows are planted east to west. Fermented and aged in tank (unoaked).
