Bone dry and beautiful bubbly. Paul Nicolle is an exceptional producer (don't sleep on their Chablis Vielles Vignes as well!)
+ GRAPE: 100% Pinot Noir, so this is a 'blanc de noirs' sparkling wine. Grown sustainably in Kimmeridgian soils (ancient seabed) on the border of the Champagne region in Molosmes, France.
+ PROFILE: Very dry, crisp, elegant. Anjou pear, cherry blossom, stony minerals, vibrant acidity. Beautifully balanced.
+ FUNDAMENTALS: Made in the Champagne method. All stainless steel tank for fermentation and aging. The base wine spends 16 months on the lees, which lends texture, and the final wine sees a low dosage.
