A beautifully balanced bubbly from the storied region of The Jura, in France. Dry and delicate. Made using the same Methode Champenoise as Champagne, and organic 100% Chardonnay grapes.

From vines grown on predominantly clay and limestone soils, hand-harvested with severe sorting in the vineyard. Fermentation takes place in stainless steel tanks with blending and bottling occurring the following harvest. Aged between 24-36 months on lees before bottling and disgorgement.
