A tour de force from the San Luis Obispo ['SLO'] appellation.
+ GRAPES: Organic and biodynamic Pinot Noir. A blend of the Bassi Vineyard and Casa Contenta Vineyard both in Avila Beach; the Chene Vineyard and Marfarm Vineyard in the Edna Valley; and a small amount from the Mountain Meadow Vineyard in the northern part of the SLO Coast AVA.
+ PROFILE: Dry, medium body and acidity. Classic old-school California Pinot, with a twist: amaro cherry meets raspberry confit meets Pacific Ocean brine. Complex and wonderful.
+ FUNDAMENTALS: Fermentation takes place in small 1.5 ton boxes with wild yeast, including ~15% whole-cluster grapes. The wine is then moved to a small wooden basket press and aged for seven months in old/used French oak barrels. Unfined/unfiltered, and minimal use of sulfites.
+ I'M RARE: A true small-production winery.
