+ GRAPES: Sustainable. 100% Assyrtiko grown at high elevations in the Peloponnese region of mainland Greece. 

+ PROFILE: Dry, crisp, fresh. Medium body. White flowers and verbena on the nose. Herbal lemon, chalky minerals, saline-oyster shell notes and some pretty darn racy acidity. Crisp, complex finish. This wine gives Chablis in the best possible way. An exceptional value. 

+ PAIRINGS: I'm a fantastic fish wine, but would also shine as an aperitif, or with classics like a mixed grill, greek salad, taramasalata and friends.

+ FUNDAMENTALS: All stainless steel winemaking using wild yeast for fermentation. The wine then spends four months on the lees, lending some texture.
