+ APPLES: Organic. 65% Heirloom apples [varieties: Newtown Pippin, Baldwin, Rhode Island Greening, Baldwin, Macintosh, Golden Russet] and 35% Bittersweet [varieties: Harry Masters Jersey, Geneva Tremlett’s, Dabinett, Ellis Bitter]. Grown in an orchard just outside of Ithaca, New York.
+ PROFILE: Bone dry, textural, crisp acidity. Alkaline tones and crisp dry apples.
+ FUNDAMENTALS: Ancestral, pet-nat style of cidermaking. Long maceration and bottle aging using only wild yeast. Unfined and unfiltered. Vegan.
