Sassi Rosa are the pink stones in this Umbria vineyard that give this mountain Sangiovese its characteristic style - imparting a different profile than a classic Tuscan Sangiovese.
+ GRAPE: 100% Sangiovese. Organic growing at very high elevations in forested lands outside of Assisi in Umbria, Italy.
+ PROFILE: I'm a food wine - and will really shine with mushroom dishes, game meats, and other earthy delights. Dry, medium body, rustic tannins, super-long finish. Coffee berry, cherry almond bark, stony cherry, dusty herbs.
+ FUNDAMENTALS: Vinified entirely in cement tanks using only wild yeast. Four years of aging before bottling. Unfined, unfiltered, vegan. Very low sulfites.
