Cruncher than a Phish cover band at the local co-op’s open mic, our Super Deluxe Pinot Noir is an extended carbonic maceration in the style of more heady Beaujolais cru wines.Think of this as Reggie’s bratty little punk rock brother. After two weeks of semi-carbonic maceration, the wine is moved to a combination of new and neutral French oak barrels, where it rests on full lees for 11 months before being transferred to stainless tanks for bottling. This is burger wine. We cannot stress that enough. Also, hot dogs. Or corn dogs, even. Giant pretzel, maybe? Basically, if it’s food that you could get at the state fair or the minor league baseball game (go Hillsboro Hops!), this wine is for you.

+ FUNDAMENTALS: Two weeks of semi-carbonic maceration in stainless steel, pressed directly into French Oak (90% neutral/10% new). Full lees aging, racked to stainless steel two weeks before bottling with a small SO2 addition at racking.
