+ GRAPE: 100% Sauvignon Blanc. Multi-parcel vineyards in the limestone region of Chavignol in the Loire Valley on Kimmeridgian limestone soils.
+ PROFILE: Dry. Medium-plus-body, crisp citrus, mineral. Long finish. A touch more opulent than your usual bistro blanc.
+ FUNDAMENTALS: Sustainable. Hand-harvested, all wild yeast. Vinified in a combo of fiberglass and cement to retain freshness. Aged on the lees for an amazing mouth feel. Bottled unfiltered. They make very little of this wine. We look forward to this every year!
+ PAIRINGS: A legit Sancerre, and pure expression of the region. You can't go wrong with raw seafood of any sort. Soft cheeses.
