+ GRAPE: Organic 100% Bobal. Grown in southern Spain in the heart of Utiel-Requena on clay and calcareous soils. 50-100 year old vines.
+ PROFILE: Dry, medium body. A nice, friendly Boboal that's balanced with crunchy plums, dark cherries, deep raspberries, dusty cocoa and a iron-like minerality. Medium tannins round things out. Meant to be consumed with a slight chill. Fresh acidity makes this a super BBQ wine!
+ FUNDAMENTALS: Fermentation with wild yeast, using only concrete for fermentation and aging to keep thing lightened up and fresh.
