+ PROFILE: Dry, fresh, classic. Minerally, marzipan, green apple, green plum, grassy, lemon peel. An exceptional value.
+ FUNDAMENTALS: according to the Champagne method: long lees-aging and secondary fermentation is done in the bottle. Vinified dry, with zero dosage and less than 5 grams of residual sugar. Aged for 9-25 months before disgorgement. Modest 11.5% ABV to keep the party going...
+ REGION: Extremadura, Spain. Why does this matter? Well, most Cava is made in the Penedes region of Catalonia in northeastern Spain, however DO law allows it to be produced across the 10 other regions. Bordered by Portugal, Castile & León, Castile-La Mancha and Andalusia, Extremadura is a southwestern region known for lots of excellent 'Vino de la Tierra' as well as Cava.
